At Balfour Winery, all of our sparkling wines, including the Leslie’s Non-Vintage collection, are crafted using the traditional method (Méthode Traditionnelle), the same process used to produce Champagne. This time-honoured technique involves a second fermentation in the bottle, which creates the wine’s signature bubbles. The wine then undergoes an extended period of maturation, during which the lees (dead yeast cells) contribute to the wine’s complexity, adding flavours of brioche and almond. The result is a refined and elegant sparkling wine, with finesse and depth that is characteristic of the highest-quality sparkling wines.
The traditional method ensures that our sparkling wines develop a fine mousse (bubble texture) and retain a balance of acidity and fruit, making them versatile wines that can be enjoyed on their own or paired with a variety of dishes.
